Thursday we took a trip to the Atlanta Food Truck Park's grand opening. It was filled with yummy menus, colorful coated trucks and live music. I actually found tofu tacos which qualified for our Engine 2 diet. Easton had a little freak out and would not stop crying, poor guy. We made it about an hour until tears came rolling down his cheeks. We weren't sure if it was the heat, crowd or loud music. It's only happened three times, but it's one of those moments where you feel like everyone is starring at you wondering why your baby won't stop crying. Now that I'm a moma I will always send peaceful energy to those moma's and dad's with little ones having freak outs while out and about. I thought to myself, it happens to all of us, take a deep breath and hold him tightly, rock him slowly and love him deeply. We ended up standing in a quiet corner to calm him down while talking with a good friend who met us there. He calmed down but was ready to go home. The adventures of parenthood may it bring new surprises everyday!

friday favorites disappeared
Well...I worked on Friday Favorites all week and woke up this morning and my draft is gone. I have no idea where it is but I had some pretty awesome FF. Not sure if I can remember them all but I will try to recreate this post and post it later (maybe..you never know with a 3 month old)!

overnight iced coffee
Yesterday I stumbled upon a recipe for overnight iced coffee. There are many days when I need a little pick me up in the afternoon but I don't have time to brew a new batch. I'm finding that any recipe with "overnight" in the title is my new best friend. Usually after dinner I prepare coffee for the next morning so last night I took four more minutes to make our overnight iced coffee for our afternoon booster. I used 8 tablespoons Starbucks coarse ground coffee (I think it's Pikes Place) filled our 8 cup french press with cold filtered water from our fridge and let the french press sit in the fridge overnight. To make my afternoon iced latte I mixed the cold pressed coffee with Vanilla flavored Agave Nectar and Almond Milk.
I poured the rest of the coffee into a Ball jar for tomorrow!

our day
Yesterday was one of those days where the sun was shinning and we enjoyed every minute of it. Easton and I woke up early, got ready and headed to Whole Foods to buy the food for our Engine 2 diet. Casey and I are on day 10 of this diet and feeling great (more below). Walking through the isles of Whole Foods keeping my almost three month old happy - I realize I am reciting the words from his favorite book (The Little Blue Truck) out loud. I realized how happy I am walking through the grocery store with him saying "beep beep beep I'm stuck I'm stuck". He instantly knew I was talking about The Little Blue Truck. I am amazed by him every single day. There are so many moments of motherhood I never knew would make me so happy. After lunch (which I've been taking time to make everyday for the Engine 2 diet) we headed outside. E and I laid on a blanket relaxing in the spring air. We read books, took pictures, talked about the wind, trees, clouds and blue sky. It was one of those moments I'll remember forever.
It was time to feed so we headed upstairs to Easton's room. Spring in GA is amazing right now, we have the windows open which makes for a very relaxing breeze. We sat in his chair and talked about our time outside. He feel asleep on my shoulder while we listened to Jack Johnson Pandora station and I again thought I will never forget this moment. It was one of those smooth sailing amazing days.
For dinner I made Veggie Curry without the Peanut Oil. The Engine 2 diet is a veggie based diet without oils. I've replaced olive oil for veggie broth when sauteing veggies which is really good by the way. This is usually how our day looks.
Breakfast
Angie - Overnight Oats with Peanut Butter, Kashi Cereal and Blue Berries
Casey - Rips Cereal (from Whole Foods) with Kiwi, Banana, Blue Berries and Almond Milk
Lunch - Veggie Panini's with Whole Grain Bread. We've tried all sorts of Panin's from Roasted Red Pepper, Mushrooms, Spinach, Onion and Homemade Hummus - to - Avocado, Tomatoes, Spinach with Hummus, yesterday we even tried Peanut Butter and Jelly Panini which was really good. I usually make a side of Edamame and homemade Whole Grain Tortilla Chips to dip in hummus.
Dinner - We've had everything from Mushroom Stroganoff, Veggie Stir Fry with Brown Rice, Black Bean Burgers on a Whole Grain Bun with Roasted Red Potatoes, Curry, Roasted Potatoes and Zucchini with Salad. For salad dressing we use Lemon Juice with a little bit of salt and pepper. Whole Grain pastas with fresh veggies. It's taken some creativity but we're doing it and feel great.
We're taking the 28 day challenge and find the most challenging part of this diet is eating out, especially in the South. I am finding that I have to be very specific when ordering. What are we missing (craving)? Nachos! Casey and I both miss chips and dip. Otherwise we are not craving meat or dairy which I didn't eat much of before but Casey used to drink milk everyday. He is loving Almond milk and not craving dairy at all. We both have more energy and Casey mentioned on his run yesterday he had more energy. I will continue to update you on our progress.
Yesterday ended snuggling with Easton on the couch while he hugged his favorite Giraffe Blanket

run mom run...
How running with a baby is different than running before a baby -
- Running after a baby is like learning how to run again, my body does not feel like my old body but it's slowly getting there. Each time I run I feel more and more like my old self
- Running with one arm while holding the jogging stroller takes some coordination
- People run or ride their bike past me and yell out "how old"? That would have not happened before the baby
- My pace is much slower and I have to remind myself to not be so hard on myself
- Hills are a stronger workout now that I'm pushing E
- I have someone looking into my eyes while I run each step, he's probably wondering why is mom breathing so hard?
- I have to pump before I run and if I don't, it's not a fun run...at all
- I am more motivated to get out there and jog
- It's fun watching Easton stare at the sky and the trees we pass
With each workout I try it feels a little different than before, but each day is easier and easier to get back into shape. Casey and I are also on day 4 of the Engine 2 diet, I will post more about the diet and our experience soon.
